Easy Lace Cookies
Ingredients:
1/2 cup unsalted butter
1 cup packed brown sugar
1/4 cup all-purpose flour
1/4 teaspoon salt
1 large egg white
1/2 teaspoon vanilla extract
For Sandwiching (optional):

1/2 cup semi-sweet chocolate chips
1 teaspoon vegetable oil (optional, for smoothing the chocolate)
Instructions:
1. Preheat Oven:

Preheat your oven to 350°F (175°C). Line two baking sheets with parchment paper or silicone baking mats.
2. Make the Cookie Dough:

In a medium saucepan over medium heat, melt the butter. Once melted, add the brown sugar and cook, stirring constantly, until the mixture is bubbly and the sugar is fully dissolved (about 2 minutes).
Remove from heat and stir in the flour, salt, and vanilla extract until well combined.
Let the mixture cool slightly for a few minutes. It should be warm but not hot.
In a separate bowl, whisk the egg white until it becomes frothy (you don’t need to beat it to stiff peaks). Gently fold the egg white into the butter mixture until just combined.
3. Shape and Bake:

Drop teaspoonfuls of dough onto the prepared baking sheets, spacing them about 2 inches apart. The dough will spread significantly, so be sure to give them plenty of space.
Bake in the preheated oven for 8-10 minutes, or until the edges are golden brown. The centers will remain soft but will crisp up as they cool.
