Sweet and Sour Chicken
Ingredients:

For the Chicken:

1 pound boneless, skinless chicken breasts or thighs, cut into bite-sized pieces
1/2 cup all-purpose flour
1/2 cup cornstarch
1 teaspoon salt
1/2 teaspoon black pepper
1/2 teaspoon garlic powder
1/2 teaspoon onion powder
1 large egg, beaten
1/2 cup cold water
Vegetable oil, for frying
For the Sweet and Sour Sauce:

1/2 cup granulated sugar
1/2 cup rice vinegar or white vinegar
1/4 cup ketchup
1/4 cup soy sauce
1 tablespoon cornstarch mixed with 2 tablespoons water (slurry)
1 clove garlic, minced
1 teaspoon grated fresh ginger (optional)
1/2 cup pineapple chunks (optional)
1/2 bell pepper, sliced (optional)
1/2 cup onion, sliced (optional)
Instructions:

Prepare the Chicken:

In a bowl, combine the flour, cornstarch, salt, pepper, garlic powder, and onion powder.
Dip each piece of chicken into the beaten egg, then coat with the flour mixture. For extra crunch, you can dip the chicken back into the egg and then coat again with the flour mixture.
Heat about 1 inch of vegetable oil in a large skillet or deep fryer over medium-high heat. The oil should be hot (350°F or 175°C) before frying.
Fry the chicken pieces in batches, making sure not to overcrowd the pan. Cook for about 4-5 minutes per batch, or until golden brown and cooked through. Remove with a slotted spoon and drain on paper towels.
