Pumpkin Oatmeal Chocolate Chip Cookies!

Ingredients:
1 cup (2 sticks) unsalted butter, softened
1 cup granulated sugar
1 cup packed brown sugar
1 cup canned pumpkin (not pumpkin pie filling)
2 large eggs
1 teaspoon vanilla extract
2 1/2 cups old-fashioned rolled oats
1 1/2 cups all-purpose flour
1 teaspoon baking soda
1 teaspoon ground cinnamon
1/2 teaspoon ground nutmeg
1/4 teaspoon ground ginger
1/2 teaspoon salt
1 cup semisweet chocolate chips
Optional: 1/2 cup chopped nuts (e.g., pecans or walnuts)
Instructions:
Preheat the Oven:
Preheat your oven to 350°F (175°C). Line baking sheets with parchment paper or silicone baking mats.

Prepare the Dough:

In a large bowl, cream together the softened butter, granulated sugar, and brown sugar until light and fluffy.
Beat in the pumpkin, eggs, and vanilla extract until well combined.
In a separate bowl, whisk together the rolled oats, flour, baking soda, cinnamon, nutmeg, ginger, and salt.
Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
Fold in the chocolate chips and nuts if using.
