Pickled Garlic

Ingredients:

1 head of garlic (about 10-12 cloves)
1 cup white vinegar
1/2 cup water
1/4 cup granulated sugar
1 tablespoon salt
1 teaspoon whole black peppercorns
1 teaspoon mustard seeds (optional)
1 bay leaf (optional)
1 teaspoon red pepper flakes (optional, for heat)
1 clean glass jar with a lid
Instructions:

Prepare the Garlic:

Peel the garlic cloves. You can use a garlic peeler or press to make this easier. If you want to make the garlic more tender and milder, blanch the cloves in boiling water for 1-2 minutes, then immediately transfer them to an ice bath to cool. Drain and pat dry.
Prepare the Brine:

In a small saucepan, combine the white vinegar, water, sugar, and salt. Bring to a boil over medium heat, stirring occasionally until the sugar and salt are dissolved. Remove from heat and let the brine cool slightly.
