Apple Dapple Cake with Brown Sugar Glaze
Ingredients:
For the Cake:
1 cup vegetable oil
1 1/2 cups granulated sugar
3 large eggs
1 tsp vanilla extract
2 cups all-purpose flour
1 tsp baking soda
1/2 tsp baking powder
1/2 tsp salt
1 tsp ground cinnamon
2 cups peeled and chopped apples (about 2 medium apples, tart varieties like Granny Smith work well)
1/2 cup chopped walnuts or pecans (optional)
For the Brown Sugar Glaze:
1/4 cup unsalted butter
1/2 cup packed brown sugar
2 tbsp milk
1/4 tsp vanilla extract
Instructions:
Prepare the Cake:
Preheat Oven: Preheat your oven to 350°F (175°C). Grease and flour a 9×13-inch baking pan or two 8-inch round cake pans.
Mix Wet Ingredients: In a large bowl, beat together the vegetable oil and granulated sugar until well combined. Add the eggs one at a time, beating well after each addition. Stir in the vanilla extract.
Combine Dry Ingredients: In a separate bowl, whisk together the flour, baking soda, baking powder, salt, and cinnamon.
Combine Wet and Dry Ingredients: Gradually add the dry ingredients to the wet ingredients, mixing just until combined. Fold in the chopped apples and nuts (if using).
Bake: Pour the batter into the prepared pan(s) and spread it evenly. Bake for about 35-40 minutes, or until a toothpick inserted into the center comes out clean.
Cool: Allow the cake to cool in the pan for about 10 minutes before transferring it to a wire rack to cool completely.
