Beer Cheese Soup
Ingredients:
4 tablespoons unsalted butter
1 medium onion, finely chopped
2 cloves garlic, minced
1 medium carrot, finely diced
1 celery stalk, finely diced
1/4 cup all-purpose flour
2 cups chicken or vegetable broth
1 cup beer (a light lager or pale ale works well)
2 cups sharp cheddar cheese, shredded
1 cup milk or heavy cream
1 teaspoon Dijon mustard
1/2 teaspoon smoked paprika (optional, for extra flavor)
Salt and black pepper to taste
2-3 green onions or chives, chopped (for garnish)
Instructions:
Cook the Vegetables:

In a large pot, melt the butter over medium heat. Add the chopped onion, garlic, carrot, and celery. Cook, stirring occasionally, until the vegetables are softened, about 5-7 minutes.
Add Flour:

Sprinkle the flour over the vegetables and stir well to combine. Cook for another 1-2 minutes to eliminate the raw flour taste.
