Cheesy Chicken Quesadillas
Ingredients:
For the Marinated Chicken:

1 pound boneless, skinless chicken breasts or thighs
2 tablespoons olive oil
1 tablespoon lime juice
2 cloves garlic, minced
1 teaspoon ground cumin
1 teaspoon smoked paprika
1/2 teaspoon chili powder
1/2 teaspoon onion powder
1/2 teaspoon dried oregano
Salt and black pepper, to taste
For the Quesadillas:

2 tablespoons olive oil or butter (for cooking)
4 large flour tortillas
2 cups shredded cheddar cheese
2 cups shredded Monterey Jack cheese
1/2 cup finely chopped onions (optional)
1/2 cup finely chopped bell peppers (optional)
1/2 cup chopped fresh cilantro (optional, for garnish)
Salsa, sour cream, and guacamole (for serving)
Instructions:
1. Marinate the Chicken:

In a bowl, mix the olive oil, lime juice, garlic, cumin, paprika, chili powder, onion powder, oregano, salt, and pepper.
Add the chicken and toss to coat well. Marinate in the refrigerator for at least 30 minutes, or up to 4 hours for more flavor.
2. Cook the Chicken:

Preheat a grill or skillet over medium-high heat. Cook the chicken for 5-7 minutes per side, or until fully cooked and an internal temperature of 165°F (74°C) is reached. Let the chicken rest for a few minutes before slicing into thin strips or chopping into bite-sized pieces.
