Ingredients:
1 can (15 oz) chickpeas, drained and rinsed (or 1 1/2 cups cooked chickpeas)
2 tablespoons olive oil
1 small onion, finely chopped
2 cloves garlic, minced
1/2 cup dry sherry (or white wine as a substitute)
1 cup vegetable or chicken broth
1 teaspoon ground cumin
1/2 teaspoon smoked paprika
1/2 teaspoon ground coriander (optional)
1/2 teaspoon red pepper flakes (adjust to taste)
1 cup fresh rocket (arugula), roughly chopped
Salt and pepper to taste
Juice of 1 lemon (optional, for added brightness)
Chopped fresh parsley (for garnish, optional)
Instructions:
Sauté the Aromatics:

Heat olive oil in a large skillet or sauté pan over medium heat.
Add the chopped onion and cook until it becomes translucent and soft, about 5 minutes.
Add the minced garlic and cook for an additional 1-2 minutes until fragrant.
