Creamy Bacon Pea Salad
Ingredients:
4 cups frozen peas (thawed)
6-8 slices bacon
1/2 cup red onion, finely chopped
1/2 cup shredded cheddar cheese (optional)
1/4 cup chopped fresh parsley (for garnish, optional)
For the Dressing:

1 cup mayonnaise
1 tablespoon Dijon mustard
1 tablespoon apple cider vinegar
2 tablespoons granulated sugar
Salt and pepper to taste
Instructions:
1. Cook the Bacon:

In a large skillet, cook the bacon over medium heat until crispy.
Remove the bacon from the skillet and drain on paper towels.
Once cooled, crumble the bacon into bite-sized pieces.
2. Prepare the Salad Ingredients:

In a large bowl, combine the thawed peas, crumbled bacon, chopped red onion, and shredded cheddar cheese (if using).
