Ingredients:

1 1/2 cups warm water (110°F/45°C)
2 tablespoons granulated sugar
1 packet (2 1/4 teaspoons) active dry yeast
4 cups all-purpose flour
1 teaspoon salt
1/4 cup baking soda
1 large egg, beaten
Coarse sea salt (for sprinkling)
Instructions:

1. Prepare the Dough:
Activate Yeast:

In a small bowl, combine the warm water and sugar. Stir until the sugar is dissolved. Sprinkle the yeast over the water and let it sit for about 5 minutes, or until it becomes frothy.
Mix Ingredients:

In a large bowl, mix the flour and salt. Make a well in the center and pour in the yeast mixture. Stir until a dough forms.
Knead Dough:

Turn the dough out onto a floured surface and knead for about 5 minutes, or until smooth and elastic. If the dough is too sticky, add a little more flour as needed.
Let Dough Rise:

Place the dough in a lightly oiled bowl, cover with a damp cloth or plastic wrap, and let it rise in a warm place for about 1 hour, or until doubled in size.
2. Shape the Pretzels:
Preheat Oven:

Preheat your oven to 450°F (230°C). Line two baking sheets with parchment paper or lightly grease them.
Prepare Baking Soda Bath:

In a large pot, bring about 4 cups of water and the baking soda to a boil.
