Easy Ice Cream Cake Recipe

Preheat Oven: Preheat your oven to 350°F (175°C). Grease or line a 9-inch springform pan with parchment paper.
Mix Brownies: Prepare the brownie mix according to the package instructions. Stir in chocolate chips if using.
Bake: Pour the brownie batter into the prepared pan and smooth the top. Bake according to the package instructions, usually for 25-30 minutes, until a toothpick inserted into the center comes out with just a few moist crumbs.
Cool: Let the brownies cool completely in the pan on a wire rack.
Prepare the Ice Cream Layer:

Soften Ice Cream: Let the ice cream sit out for about 10-15 minutes to soften slightly for easier spreading.
Spread Ice Cream: Once the brownie base is completely cool, spread the softened ice cream evenly over the brownie layer. Smooth the top with a spatula.
Freeze: Return the cake to the freezer and freeze for at least 2 hours or until the ice cream layer is firm.
Prepare the Whipped Cream:

Whip Cream: In a medium bowl, beat the heavy cream, powdered sugar, and vanilla extract with an electric mixer on high speed until stiff peaks form.
Spread Whipped Cream: Once the ice cream layer is firm, spread the whipped cream evenly over the top of the ice cream layer.
