Garlic Butter Pork Chops with Creamy Scalloped Potatoes

Ingredients:
For the Pork Chops:
4 pork chops (1-inch thick)
Salt and pepper to taste
1 tablespoon olive oil
3 tablespoons butter, divided
2 sprigs fresh thyme, plus 1 tablespoon fresh chopped thyme
6 cloves garlic, minced
For the Creamy Scalloped Potatoes:
6 medium Yukon Gold potatoes, peeled and thinly sliced
1 cup Gruyère cheese, grated
1 cup heavy cream
2 cloves garlic, minced
