Grandma’s Orange Creamsicle Salad
Ingredients:
1 can (11 oz) mandarin oranges, drained
1 can (20 oz) crushed pineapple, drained
1 cup mini marshmallows
1 cup shredded coconut (optional)
1/2 cup chopped walnuts or pecans (optional)
1 cup sour cream
1/2 cup orange sherbet, softened
1/2 cup heavy cream
1/4 cup granulated sugar (optional, to taste)
Instructions:
1. Prepare Ingredients:
Drain Fruit:
Drain the mandarin oranges and crushed pineapple well to remove excess moisture. Pat dry with paper towels if needed.
Soften Sherbet:
Allow the orange sherbet to sit at room temperature for about 10-15 minutes to soften slightly.
2. Mix Ingredients:
Combine Fruit and Add-ins:
In a large mixing bowl, combine the mandarin oranges, crushed pineapple, mini marshmallows, shredded coconut (if using), and chopped nuts (if using).
Add Cream Mixture:
In a separate bowl, mix together the sour cream and softened orange sherbet until smooth.
Combine:
Gently fold the sour cream and sherbet mixture into the fruit mixture until evenly combined.
