Orange Infused Sweet Ricotta Peach Cookies

Ingredients:

**For the Cookies:**
– 2 and 1/2 cups All-purpose flour
– 1 tsp Baking powder
– 1/2 tsp Baking soda
– 1/4 tsp Salt
– 1 cup Granulated sugar
– 1/2 cup Unsalted butter, softened
– 1 cup Ricotta cheese
– 1 Large egg
– 1 tsp Vanilla extract
– 1 tbsp Orange zest
– 1 cup Fresh peaches, diced

**For the Orange Glaze:**
– 1 cup Powdered sugar
– 2-3 tbsp Orange juice (freshly squeezed)
– 1 tsp Orange zest

Directions:

1. **Preheat Oven:** Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper or a silicone baking mat.

2. **Mix Dry Ingredients:** In a medium bowl, whisk together the all-purpose flour, baking powder, baking soda, and salt. Set aside.

3. **Cream Butter and Sugar:** In a large mixing bowl, cream together the softened butter and granulated sugar until light and fluffy. Add the ricotta cheese and mix until well combined. Beat in the egg, vanilla extract, and orange zest until smooth.
