Orange Slice Oatmeal Cookies
Ingredients:
1 cup unsalted butter, softened
1 cup granulated sugar
1 cup packed brown sugar
2 large eggs
1 teaspoon vanilla extract
1 1/2 cups all-purpose flour
1 teaspoon baking soda
1/2 teaspoon salt
3 cups old-fashioned oats
1 cup chopped orange slices (about 8-10 orange slices, or you can use candied orange peel)
1 cup sweetened shredded coconut
Instructions:
Preheat the Oven:
Preheat your oven to 350°F (175°C). Line baking sheets with parchment paper or silicone baking mats.
Cream the Butter and Sugars:
In a large bowl, beat the softened butter, granulated sugar, and brown sugar together until creamy and smooth.
Add Eggs and Vanilla:
Beat in the eggs one at a time, then add the vanilla extract and mix until well combined.
Combine Dry Ingredients:
In a separate bowl, whisk together the flour, baking soda, and salt.
Mix Dry Ingredients into Wet Ingredients:
Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
Add Oats, Orange Slices, and Coconut:
Stir in the old-fashioned oats, chopped orange slices, and shredded coconut until evenly distributed throughout the dough.
