Peach brie pastry tarts with peppered rosemary honey

Ingredients:

Produce:
• 1/4 cup Fresh Basil
• 3 Peaches
• 2 tbsp Fresh Rosemary
• 2 Shallots
Refrigerated:
• 1 Egg
Condiments:
• 1/3 cup Honey
Baking & Spices:
• Kosher Salt and Black Pepper to taste
Oils & Vinegars:
• 2 tbsp Apple Cider Vinegar
• 2 tbsp Extra Virgin Olive Oil
Bread & Baked Goods:
• 2 sheets Frozen Puff Pastry
Dairy:
• 1 (8 ounce) wheel Brie Cheese
Instructions:
1. Thaw Puff Pastry: Remove the frozen puff pastry sheets from the freezer and let them thaw according to the package instructions.
2. Preheat Oven: Preheat your oven to 400°F (200°C).
3. Prepare Ingredients:
• Slice the peaches into thin wedges.
• Finely chop the fresh basil, rosemary, and shallots.
4. Make Peppered Rosemary Honey:
• In a small saucepan, combine the honey, chopped rosemary, and a pinch of black pepper. Heat over low heat for a few minutes, stirring occasionally, until the honey is warm and infused with the flavors of rosemary and pepper. Remove from heat and set aside.
5. Prepare Brie Cheese:
• Cut the brie cheese into thin slices or small wedges, removing the rind if desired.
