Ingredients:
For the Dough:

1/2 cup warm milk (110°F/43°C)
1/4 cup granulated sugar
1 packet (2 1/4 teaspoons) active dry yeast
1/4 cup unsalted butter, melted
1/2 cup canned pumpkin (not pumpkin pie filling)
1 large egg
1/2 teaspoon vanilla extract
3 1/2 to 4 cups all-purpose flour
1/2 teaspoon salt
1 teaspoon ground cinnamon
For the Filling:

1/2 cup unsalted butter, softened
1/2 cup brown sugar, packed
1/4 cup canned pumpkin
1 tablespoon ground cinnamon
1/4 teaspoon ground nutmeg
1/4 teaspoon ground cloves
For the Cream Cheese Glaze:

4 oz cream cheese, softened
2 tablespoons unsalted butter, softened
1 cup powdered sugar
1/2 teaspoon vanilla extract
2-3 tablespoons milk (as needed)
Instructions:
Prepare the Dough:

Activate Yeast: In a small bowl, combine the warm milk, granulated sugar, and yeast. Let it sit for about 5 minutes until foamy.
Mix Dough Ingredients: In a large mixing bowl, combine the melted butter, pumpkin, egg, and vanilla extract. Add the yeast mixture and stir to combine.
Add Dry Ingredients: Gradually add 3 1/2 cups of flour, salt, and cinnamon. Mix until a soft dough forms. You may need to add more flour if the dough is too sticky.
Knead and Rise: Turn the dough out onto a lightly floured surface and knead for about 5-7 minutes until smooth and elastic. Place the dough in a lightly greased bowl, cover with a clean towel, and let rise in a warm place for about 1 hour, or until doubled in size.
Prepare the Filling:

Mix Ingredients: In a medium bowl, combine the softened butter, brown sugar, pumpkin, cinnamon, nutmeg, and cloves. Mix until well combined.
Assemble the Rolls:

Roll Out Dough: Punch down the risen dough and turn it out onto a floured surface. Roll it into a rectangle about 1/4 inch thick.
Spread Filling: Evenly spread the pumpkin filling over the dough, leaving a small border around the edges.
Roll Up: Starting from one long side, carefully roll the dough into a tight log. Slice the roll into 12 equal pieces.
Bake the Rolls:

Prepare Pan: Place the rolls in a greased 9×13-inch baking dish, spacing them slightly apart.
Second Rise: Cover and let the rolls rise for about 30 minutes.
Preheat Oven: Preheat your oven to 350°F (175°C).
Bake: Bake the rolls for 25-30 minutes, or until golden brown and cooked through.
