Roasted California Blend Vegetables
Ingredients:

1 bag (16 ounces) frozen California blend vegetables
2 tablespoons olive oil
1 teaspoon garlic powder
1 teaspoon onion powder
1/2 teaspoon dried thyme or rosemary
Salt and pepper, to taste
1 tablespoon grated Parmesan cheese (optional)
Instructions:

Preheat the Oven:

Preheat your oven to 425°F (220°C).
Prepare the Vegetables:

Spread the frozen vegetables out on a baking sheet. No need to thaw them; they can go straight from the freezer to the oven.
Season:

Drizzle the olive oil over the vegetables and toss to coat evenly.
Sprinkle the garlic powder, onion powder, thyme (or rosemary), salt, and pepper over the vegetables. Toss again to distribute the seasoning.
Roast:

Roast in the preheated oven for 20-25 minutes, or until the vegetables are tender and lightly browned. Stir halfway through cooking for even roasting.
Finish:

Optional: Sprinkle with grated Parmesan cheese just before serving for added flavor.
Serve:

Serve as a side dish or over a bed of rice or quinoa.
