Spicy Shrimp Sushi Stacks

Ingredients:

For the Sushi Rice:
1 cup sushi rice
1 1/4 cups water
2 tablespoons rice vinegar
1 tablespoon sugar
1/2 teaspoon salt

For the Shrimp Layer:
1/2 pound cooked shrimp, chopped
2 tablespoons mayonnaise
1 tablespoon sriracha sauce

For the Avocado Layer:
1 avocado, mashed
1 teaspoon lime juice
Salt, to taste

For Toppings:
1/2 cucumber, diced
1 small carrot, grated
Black sesame seeds for garnish

Directions:
Prepare Sushi Rice:
Rinse the sushi rice under cold water until the water runs clear.
Combine rinsed rice and water in a rice cooker and cook according to the manufacturer’s instructions.
Once cooked, gently fold in rice vinegar, sugar, and salt. Allow to cool to room temperature.

Mix Shrimp Layer:
In a bowl, combine the chopped shrimp with mayonnaise and sriracha sauce. Set aside.
