Strawberry Slab Pie
Ingredients:
For the Crust:

2 1/2 cups all-purpose flour
1 cup (2 sticks) unsalted butter, cold and cut into small pieces
1/4 cup granulated sugar
1/4 tsp salt
1/4 cup cold water (more if needed)
For the Filling:

4 cups fresh strawberries, hulled and sliced (or about 3 1/2 cups frozen strawberries, thawed and drained)
1 cup granulated sugar
1/4 cup cornstarch
1/4 tsp salt
1 tbsp lemon juice (about 1/2 lemon)
1/2 tsp vanilla extract
For the Topping (Optional):

1 egg, beaten (for egg wash)
1 tbsp granulated sugar (for sprinkling)
Whipped cream or vanilla ice cream (for serving)
Instructions:
Prepare the Crust:

Mix Dry Ingredients: In a large bowl, whisk together the flour, sugar, and salt.
Cut in Butter: Add the cold butter pieces and use a pastry cutter or your fingers to work the butter into the flour mixture until it resembles coarse crumbs with some pea-sized pieces.
Add Water: Gradually add the cold water, a tablespoon at a time, until the dough starts to come together. Be careful not to overwork the dough.
Chill: Divide the dough in half, shape each half into a disc, and wrap in plastic wrap. Chill in the refrigerator for at least 30 minutes.
Prepare the Filling:

Mix Ingredients: In a large bowl, combine the strawberries, sugar, cornstarch, salt, lemon juice, and vanilla extract. Stir until well mixed and set aside.
Assemble the Pie:

Preheat Oven: Preheat your oven to 375°F (190°C).
Roll Out Dough: On a lightly floured surface, roll out one disc of dough to fit a 10×15-inch baking sheet (or a similar size). Transfer the rolled dough to the baking sheet and press it into the bottom and up the sides.
Add Filling: Pour the strawberry filling evenly over the dough.
Roll and Place Top Crust: Roll out the second disc of dough and place it over the filling. You can cut it into strips and make a lattice crust, or simply place it whole and cut a few slits in the top to allow steam to escape.
Seal Edges: Trim any excess dough and crimp the edges to seal. Brush the top crust with the beaten egg and sprinkle with granulated sugar.
